If it's any help for this discussion:
We still live in a 130 year old farm house. 5 years ago I put a layer of 
straw bales up above the brick ceiling, and covered it with a thin layer 
of mud to reduce fire risk (and annoy the mice). The roof is old, plenty 
of ventilation. It helped to insulate significantly, and we never had 
any problems with fungi. (-It's the same area we now hope to get a grant 
to renovate into educational area.)

In other words: I support Daniels comment; why not use straw?
